Happy Cinco de Mayo!

It's Cinco de Mayo and that means Margaritas, Tacos and of course Cupcakes for me!  I hope everyone is having a great day relaxing and enjoying their favorite Mexican food.  I baked some very special cupcakes for the occasion and they turned out AMAZING!

  I started with a dark chocolate cake, the cupcakes were filled with a rich and spicy chocolate ganache, then topped with dark chocolate buttercream, a dusting of hot chili powder and drizzled with more ganache, it was almost chocolate overload.  That's right, there aren't any left.

For the second cupcake I wanted something sweet and tangy, a Tequila Lime Cupcake it was.  Very Vanilla cake was the base for this Cinco de Mayo treat.  I filled the cupcakes with a fresh lime curd and added a little tequila and Grand Marnier for that margarita flavor.  The cupcakes were then topped with my vanilla buttercream, I added some fresh lime and orange zest, as well as a little more tequila and Grand Marnier and finished them with some white sanding sugar.


Tequila Lime Curd 
Makes enough to fill 12 cupcakes

Ingredients

Zest of 3 Limes
1/2 Cup Fresh Lime Juice
3/4 Cups Vanilla Sugar (regular white sugar may also be used)
2 Whole Eggs
2 Egg Yolks
4 Tablespoons (1/2 Stick) Butter, cubed
2 Teaspoons Tequila
2 Teaspoons Grand Marnier

Directions

 1. In a small sauce pan, whisk together Lime Zest, Lime Juice, Vanilla Sugar and Eggs.
2. Over medium heat stir mixture with a wooden spoon until sugar is dissolved.
3. Add butter and continue to stir mixture constantly until it reaches a pudding like consistency.
4. Pour mixture through a wire-mesh strainer and let cool before filling cupcakes.
5. After the lime curd has cooled stir in Tequila and Grand Marnier.
6. Store your lime curd in an airtight container in the refrigerator.
